Give mock tests at faceprep website. After the test you can get detailed report on how much time you have spent in a question. Analyse your weak topics according to the result and work on those topics. Learn time management for aptitude round.

You can download datasets from kaggle.

Just search a topic that interests you in the search bar.
For eg - search " dance datasets".
You also find examples of projects here .
You can also search projects from youtube or GitHub.
For data analytics projects you can use SQL ,Python ,tableau / power BI or MS excel.
If you have any core project or a web development / ML/ AI project that also you can include in your resume.
But it would be better to have atleast 1 data analytics project when you are applying for analyst role. Study about data analytics applications .
6. Other tips

• Resume should be of 1 page only .
• Try to include numbers in resume.
• Highlight the important points in the resume .
• All links should be clickable in resume (linkedin profile, GitHub , live project ,certificates,coding profiles on gfg ,leetcode etc.)
• Read about the company you are applying for before the interview.
• Read the job description and write skills in your resume according to job description the company provides but don't fake it. Write only those skills in which you are confident that you will be able to answer in the interview.
• Prepare HR questions beforehand but don't mug up. Also prepare " Why do you want to switch from core to data analytics?".
